LSU Champagne is a great-performing honey fig. Why? It has a short susceptibility window or hang time that allows the grower to consistently harvest higher-quality figs before rain events. However, unlike its parent, Celeste, LSU Champagne cannot withstand moisture nearly as well. Similar to LSU Tiger & Hollier, excessive soil moisture or excessive pruning can increase its fruit size, causing all three to split, swelling past a size their skin allows for.

 

Harvest them at the perfect time, and they actually can be quite fruity, with notes of date and vanilla!
