The Red Lake currant (Ribes rubrum 'Red Lake') is a deciduous shrub widely considered one of the most reliable and prolific producers in the currant family. It is famous for its "strigs"—long, drooping clusters of translucent, ruby-red berries that hang heavily from the branches, making for an incredibly efficient harvest.
While they possess a sharp, bracing tartness that can be intense when eaten solo, this high acidity makes them a brilliant culinary tool for balancing flavor profiles. In a fruit salad, they act as a natural "brightener," where their tart juice cuts through the syrupy sweetness of stone fruits or melons, while the firm skins and tiny, edible seeds provide a sophisticated textural "pop" that softer fruits lack. Beyond fresh use, their exceptionally high pectin content makes them a gold standard for clear, jewel-toned jellies, and they are frequently processed into syrups, fermented for fruit wines, or used in savory gastriques to accompany rich meats.
Red Lake is extremely hardy, self-fertile, and can easily be maintained at a 5x5 ft size. Simply remove 3-year-old canes or trunks at the base of the plant on an annual basis.
