Taking an UNDER-RIPE Fig and Turning it into something SPECIAL

This Smith fig has been in my fridge for a couple weeks. The flavor has intensified greatly because it continues to dry. If you cut figs in half and lay them out on a tray with the skin side down, they'll dry and preserve in your fridge. Even if you pick them a little early. This is a great way to enjoy your fruits that I've been doing with many figs over the last two years now. Just don't stack em or let them touch too much and you can really have a super awesome experience from what originally wasn't.
